“‘Top Chef Season 18: The struggle is real, bro.”

That’s Alabama’s Roscoe Hall, reflecting on his experiences as a contestant on the Bravo reality series.

On Thursday night, viewers could watch Hall -- who was eliminated from “Top Chef” on April 1 during the first episode of the season -- get a shot at redemption on “Last Chance Kitchen.” It’s a web series linked to the main show, hosted by “Top Chef” judge Tom Colicchio.

On “Last Chance Kitchen,” two eliminated contestants face off, preparing another dish for Colicchio to sample and evaluate. The chef who wins that challenge continues on “Last Chance Kitchen,” trying to beat the next contestant who gets eliminated on “Top Chef.”

From there, the web series proceeds in the same fashion. The victor of the weekly challenge goes head-to-head with the next eliminated contestant, until only one chef is left standing. The final winner of “Last Chance Kitchen” returns to “Top Chef” and competes against the chefs remaining on the main show.

“Everyone loves a comeback,” Colicchio said, welcoming Hall to “Last Chance Kitchen.”

For a challenge called “It Takes a Thick Skin,” Hall was paired with Sasha Grumman of Newport Beach, California. The two were asked to select three ingredients with tough exteriors -- in the categories of proteins, nuts and produce -- and whip up a balanced dish in 25 minutes.

Hall chose clams, peanuts and jackfruit. Grumman picked oysters, pistachios and cherimoya (a cone-shaped fruit with scaly skin and creamy, sweet flesh).

“I’m going to show who I am and just let myself speak on the plate,” Hall said.

Hall’s dish -- peanut veloute (a velvety sauce) with jackfruit fritters, clams and shiitake mushrooms -- earned praise from Colicchio, who called it “a really nice composition.”

In the end, though, Colicchio named Grumman as the winner of the challenge. Her dish -- chicken fried oysters with miso, cherimoya and green apple puree and toasted pistachios -- was “outstanding,” Colicchio said.

Hall had to pack up his knives -- again -- and go home.

“’Last Chance Kitchen’ has opened my eyes to so many new possibilities,” said Hall, 43. “Whatever comes from this, I got to stick to who I am. It’s a personal journey, man.”

Hall, a Birmingham resident, is the culinary director for Post Office Pies and former executive chef at Rodney Scott’s BBQ. Watch him compete on “Last Chance Kitchen” in the video below.
